Coffee Processing
The washing process for this microlot starts by selectively harvesting all ripe beans. The cherries are fermented in tanks for 48 hours for a greater concentration of sweetness, and then move on to the pulping process. After pulping they are dried on African beds for at least 168 hours using ambient temperature.
