Coffee Information
This lot was produced by The Tocto Family: “United for Outstanding Coffee”
Led by Don Serafín Tocto and supported by his three sons and daughter, the Tocto Family has become a shining example of unity and hard work. With Joel’s (one of the son’s) guidance, they have refined their harvest and post-harvest processes, creating coffees with remarkable profiles that reflect their passion and dedication. Their story is proof that when a family works together, coffee is not just produced—it becomes a legacy of pride and excellence.
Coffee Processing
The process for this washed microlot starts by selectively harvesting all ripe beans. The cherries are fermented in tanks for 72 hours; after the fermentation process, they are then pulped. They are then dried on solar dryers (solar tents) for at least 170 hours using controlled temperature.
