César Sampertegui was among the first producers in Santa María to embrace experimentation. He not only is constantly innovating his processes but was also one of the earliest active members of the cooperative, contributing his experience and passion during its foundational years. His example opened pathways and built trust for many other producers who continue to follow in his footsteps today.
Coffee Processing
The process for this washed microlot starts by selectively harvesting all ripe beans. The cherries are fermented in tanks for 96 hours; after the fermentation process, they are then pulped. They are then dried on African beds for at least 165 hours using ambient temperature.
