Coffee Information

Our sister company Dormans alongside Rwanda Trading Company (RTC) has brought us an extraordinary washed-process Bourbon from the Coproca washing station in Rwanda's stunning Nyamasheke district. Nestled in the lush western highlands near Lake Kivu, this coffee is a true labour of love from around 600 dedicated smallholder farmers. These farmers deliver handpicked top-quality cherries grown on the steep hillsides at elevations at around 1,700–1,900 meters. The ideal cool climate and rich soils ensure a slow, even maturation, creating a coffee profile that's nothing short of exceptional!

Harvest – March till June

Processing method – Coffee cherry is hand sorted and floated in tanks before being pulped. Coffee is pulped within 8 hours after cherry has been harvested. Parchment undergoes dry fermentation  for 15-18 hours before the remaining mucilage is washed off, followed by soaking which typically takes 12 hours. Once complete coffee is dried outside on raised beds. Parchment is sun dried for around 12-14 days to reach ideal moisture % levels.
