Coffee Information
The Gran Del Val name represents four generations dedicated to coffee cultivation. Its history takes us back to 1914, when Gabriel de Dianous established his first coffee plantation. In 1991, the second generation under the direction of Ricardo Fernández Carazo and his wife Teresita de Dianous continued the family tradition and founded Cafetalera Fernández, the family business that processes and commercializes our coffee.
The coffee plantations (estate coffee) are located in the mountains of Boquete at an altitude of up to 1,600 meters above sea level, blessed with a rich volcanic soil, cool climate, and a fine drizzle called "bajareque" that lasts throughout the year. According to coffee experts, it has an ideal microclimate that contributes to the production of excellent specialty coffee. Gran de Val is well known for its coffee varieties; Typica, Geisha, Java, Caturra, and Catuai.
Processing Details; “This lot was harvested in early February at Gran del Val where cherries underwent the depulping process. Following this, seeds were fermented at 18°C, and under 5 psi of pressure for 3 days. A mixed culture inoculum composed of Torulaspora delbrueckii, Pichia kluyveri, Framgarden Kveik, and Metschnikowia reukaufii was selected to carry out fermentation. Later, cherries remained in our drying beds for 15 days until complying with quality standards”
