Coffee Information
This lot was produced by Joel Tocto: “The Cupper with Big Dreams”. Since his teenage years, Joel Tocto has been fascinated by the complexity of coffee. That curiosity led him to become a cupper, driven by the desire to scientifically understand every detail
of the bean. Today, Joel not only produces coffee but also transforms it: blending science, creativity, and innovation to unlock its full potential. His mission is clear: to turn every cup into a unique experience that speaks of the soul of his land.
Coffee Processing
The process for this microlot starts by selectively harvesting all ripe beans. The cherries are fermented in tanks for 144 hours. They are then dried on solar dryers (solar tents) for at least 170 hours using controlled temperature.
