Producer Story
Finca Los Sauces is a 3.5 hectare farm founded in 1970 in the highlands of Chillurco, Huila. The farm sits at 1800 MASL on volcanic soils and is managed today by producer Sergio Caldero, with coffee sourced through Condor Specialty. The farm currently grows Catuai and focuses on clean, high quality washed coffees. The origins of Finca Los Sauces are rooted in family. Sergio’s father first purchased and worked this land, establishing the foundations of the farm. When Sergio married 20 years ago, he and his wife chose to dedicate themselves fully to the farm, producing coffee out of a deep love for their territory and their community. Over the years, their two children have become an important support, helping the family continue shaping and improving the project.
Processing
Cherries are hand picked and mechanically depulped before washed fermenting in concrete tanks at the farm. Drying takes place on patios and raised beds which produces a structured balanced profile typical of high elevation coffees from Pitalito and Chillurco.
